Roasting brings out the natural sweetness of sweet potatoes. In addition, delicious falafels are fried until golden. The falafels are dipped into a flavorful sauce. Marinated red onion and fresh rocket complete this dish.

Sweet potato:: 2 sweet potato; 1-1.5 tspsalt; 0.5 tspblack pepper; 1 pkgdried thyme; 2 tbspoil
Red onion:: 1 red onion; 0.5 tbspwine vinegar; 1 tspsugar; a pinch of salt
Sauce:: 1 pkgoat cream; 1 garlic clove; 0.5 tbspwine vinegar; a pinch of salt; a pinch of black pepper; 1 pkgpaprika powder
In addition:: 1 pkgrocket
Falafels:: 1 pkgfalafels; 3-4 tbspoil

Tip

Mix the rocket with the marinated red onion.

Preheat the oven to 225°C. Line a baking sheet with parchment paper.

Wash the sweet potatoes thoroughly and cut them into sticks. Place on the sheet and season with salt, black pepper, dried thyme, and oil. Roast in the oven for about 25–30 minutes.

Peel and slice the red onion into very thin strips and place in a bowl. Season with white wine vinegar, sugar, and salt.

Place the oat fraiche in a separate bowl. Peel and grate in the garlic clove. Season with white wine vinegar, salt, black pepper, and paprika powder.

Rinse the rocket in a sieve under cold water and leave to drain.

Heat a large frying pan with oil. Add the falafels to the pan and fry for about 5–6 minutes, turning gently. Fry in two batches if necessary.

Serve the sweet potato fries with the falafels and sauce. Finish the portions with marinated red onion and rocket.
