Oven-Baked Pasta with Smoked Chicken & Cherry Tomatos

Preheat the oven to 180 degrees. Bring a pot of water to the boil. Chop the smoky chicken and cherry tomatoes. Peel and mince the garlic (or use a garlic press).

When the water is boiling, season with salt and add the pasta. Cook for 7-9 minutes until the pasta is done. Then drain and reserve about 100 ml of the pasta cooking water for the sauce.

Heat a drop of oil in a pan and add the garlic. Fry lightly and then add the coffee cream.

Cook for a few minutes, stirring constantly, until the sauce has become a little creamier. Add the pasta cooking water. Season with salt and pepper.

Mix together the sauce, half a pack of cheese, cooked pasta, cherry tomatoes, sun-dried tomatoes and smoked chicken. Place the mixture in a baking dish and cover with the remaining cheese. Bake in the oven for 12-15 minutes or until the cheese is golden brown.

Serve the baked pasta on plates. Enjoy!
