Creamy Truffle-Beef Pasta

Bring salted water to a boil and cook the pasta for 7-9 minutes until al dente. Then drain (reserve a glass of the cooking water) and rinse under cool running water.

Peel and finely chop the garlic. Heat a drizzle of olive oil in a pan over medium heat and lightly sauté the garlic. Do not brown it!

Then increase the heat in the pan, add the beef and brown it, stirring constantly. Then reduce the heat and let the meat soften over medium heat.

Then pour in the cream and bring to the boil. Add the melted cheese. Stir until the melted cheese has melted and the sauce has thickened slightly. Season the sauce with lemon zest and juice, salt and pepper.

Add the cooked pasta to the sauce and mix through. If the pasta seems too dry, add a little of the pasta cooking water.

Serve immediately, sprinkle the grated cheese on top and grind some black pepper if possible. Enjoy!
