Spinach shrinks a lot when cooked, so it's worth using it generously – about 200 grams of fresh spinach makes one serving once cooked. Spinach cooks fast, wilting in just a few minutes on a hot pan or in a pot.
Popular ways to use it include creamed spinach, spinach-filled pancakes and spinach in creamy pasta sauces or soups. Frozen spinach is a handy alternative to fresh, as long as you thaw it first and squeeze out the extra liquid before using it.
