Soup:: 1 pkgpotatoes; 3 carrot; 2 garlic clove; 2 tbspoil; approx. 11-12 dl water; 1.5 tspsalt; 0.5 tspblack pepper; 1 pkgdried herb mix; 1 pkgbay leafs 2-3 pcs; 1 pkgoat cream + splash of water; 1 pkgspring onion
Tofu:: 2 pkgsmoked tofu; 2 tbspoil; a pinch of salt; a pinch of black pepper
In addition:: 1 pkgrye bread

Peel and chop the potatoes and carrots into cold water and place them in the refrigerator the night before.

Peel and chop the potatoes. Peel, rinse, and chop the carrots. Peel and finely chop the garlic cloves.

Heat a pot with oil. Add the carrots and garlic to the pot. Sauté, stirring, for a few minutes.

Measure the water into the pot. Add the potatoes. Season with salt, black pepper, dried herb mix, and bay leaves. Bring to a boil and cook for about 15 minutes, or until the potatoes are nearly tender.

Cut the tofu in half lengthwise and pat dry with paper towels. Dice the tofu.

Heat a frying pan with oil. Add the tofu cubes and fry, turning, for about 5–7 minutes. Season with salt and black pepper.

Rinse and slice the spring onions.

When the potatoes are nearly tender, pour the oat cream into the soup. Rinse the carton with water and add that water as well. Add the tofu and spring onions to the soup. Bring to a boil.

Serve the soup with rye bread.
